Cave du Verseau - Veyras

This report looks at the 2015 vintage and the art of vine cultivation – with particular emphasis on a “pick of the crop”, the Petite Arvine wine – in the company of Stéphane Clavien, wine-grower and producer at Cave du Verseau in Veyras, just above Sierre.

Talking about the 2015 vintage, Stéphane first addresses the weather that year. Particularly in Valais, the 2015 vintage experienced a weather pattern that was the complete opposite of that of 2014. While the latter could be described as predominantly grey (because the summer was relatively cloudy), 2015 was blue, dry and beautiful, almost tropical.

In terms of vine cultivation, Stéphane reports it was a year with no big surprises. Because the juice was especially rich and concentrated, the wines have taken on an impressive colour. Their vinification took time, and the diversity of grape varieties in Valais meant that the wine-grower’s expertise had to adapt.

In his wine cellar, Stéphane places great importance on biodiversity principles. He has a head start in Valais, whose particularly favourable climate means fewer chemicals need to be used on the vines. But it also requires awareness and a deliberate search for balance between fauna and flora. The whole has to work, and its effectiveness can be seen every day. Through the application of these principles, the vineyard gradually transforms into a true biotope. Birds, insects, rodents and other plants establish themselves there. This life nourishes the terroir. It is therefore a long-term strategy that Stéphane wants to implement here, and the results can already be seen in his wines, particularly in his pick of the crop: the Petite Arvine.

For the 2015 vintage, this Petite Arvine was characterised by small berries. It was aged sur lie, and is particularly delicate. Tasting shows it to be sweet with delightful aromas of honey and citrus fruit. In the mouth, this slightly carbonic wine has an outstanding length.

The characteristics of this Petite Arvine 2015 make it the ideal match for apple pastries or blue cheeses such as Roquefort.
